Cheddar Pear Pie

Well, my mom asked for this recipe, so I figured I may as well share it with all of you.  Cheddar Pear Pie, sounds strange, but we’ve served it for lots of people this summer and everyone always wants seconds.  It is very good and very easy to make.  Enjoy!

Cheddar Pear Pie (c/o a Taste of Home magazine.  These are great magazines!)

4 large ripe pears, peeled and thinly sliced
1/3 c. sugar
1 Tbsp cornstarch
1/8 tsp salt
1 unbaked pastry shell (9 inch)

Topping:
1/2 c. shredded cheddar cheese
1/2 c. all purpose flour
1/4 c. butter, melted
1/4 c. sugar
1/4 tsp salt

In bowl, combine pears, sugar, cornstarch and salt.  Pour into pastry shell.  Combine topping ingredients until crumbly and sprinkle over filling.

Bake at 425 for 25-35 minutes or until crust golden and cheese melted.  Cool on a wire rack for 15-20 min.  Serve warm.  Store in refrigerator.  Serves 6-8.

Yes I too can vouch for this pie, and I am no pie slouch.

…course, Apple pie I can do without, but this pear thing rates 7.5 out of ten stars.
